Jam biscuits


Intro:

Its raining since past three days and I was busy doing my embroidery for the last cushion .I was wondering how these jam biscuits are made.  I remember lavishing them since my childhood. As I scrolled over my recipe book ,I got this recipe which I had copied few years back but had no time to bake. As this recipe called for egg and I didn't have any, I preferred using milk. Hope you all will love this recipe.


Jam biscuits



Ingredients:

Refined flour 200 gms
Sugar 100 gms
Butter 100 gms
Milk 1 tbsp
Vanilla essence 1 teaspoon
Mixed fruit jam 2 teaspoon


Recipe:

 Powder the sugar. Mix the flour,sugar and butter with gentle hands until they look like breadcrumbs. Add vanilla essence and mix well. Now add milk 1 teaspoon at a time and mix. The mixture should form a soft dough. So remember that excess milk will make the dough sticky to handle. Use milk only as required.  Roll this dough into a cylinder and wrap with a cling film.  Keep in the refrigerator for 3-4 hours. Preheat the oven at 180 c for 5 minutes. Take your dough off the fridge and remove the cling film.  Cut 1/2 inch circular discs of the cylindrical dough. Give it a proper round . Make a depression in the middle  of the disc using your little finger. Using a pointed knife spoon little jam into this depression . Place them on a baking tray. Bake it in the preheated oven for 8-10 minutes. If you see the biscuits are brown before the mentioned time remove them from the oven. Baking always depends upon the size of the biscuit. Cool them completely on a wire rack. The biscuits may be soft when hot ,but don't worry, once cool they will be crispy.

Note: Always refrigerate the cookie dough for at least 2 hours. This will help you get good shape and avoid  the fat of the dough sticking your palms.

 Consume them only after they have reached room temperature. Warm biscuits will be soft.

Tutti fruti loaf


Intro:

This is one of the simplest cake  I have ever prepared and tastes so yummy. Kids enjoy this cake as they love the taste and colour of tutti fruti bits. I have used flax seeds instead of eggs,You may use egg as well :) Bake this cake and enjoy with your kids.

Tutti fruti loaf


Ingredients:

Refined flour( maida) 120 grams
Butter 100 grams
Powdered Sugar 100 grams
Flax seeds powder 2 tablespoons
Baking powder 1/2 teaspoon
Baking soda1/2 teaspoon
Vanilla essence1 teaspoon
Tutti fruti 1/2 cup
 Milk as required


Recipe:

Mix the flax seeds powder in 1/2 cup of water and keep aside. Add a teaspoon of flour to the tutti fruti and mix well.Grease the loaf tin with butter on all four sides. Sprinkle some refined flour and shake the tin so that the refined flour sticks the butter greased all over the tin.  Sieve refined flour ,baking powder,baking soda. Cream the butter and powdered sugar. Add essence and mix well. Now add the flax seed paste and mix well. Add the flour ,few spoons at a time . If you find the batter thick ,add some milk. The batter should form a ribbon when poured back into the mixing bowl. Now mix half of the tutti fruti into the batter and mix. Pour into the greased pan. Top it with the remaining tutti fruti . Bake in a preheated oven for 35-40 minutes.

Note:   By adding flour to the tutti fruti ,they will not sunk in the loaf pan and will stay sticked to the batter.

Flax seeds when mixed with water will form a rubbery paste. This will make the cake fluffier.

Savoury biscuits


Intro:

Rainy season is so beautiful.Its so nice to see the garden turn completely green . This is a season of food cravings ,some fried,some spicy and hot.These savoury biscuits are low fat ,easy to prepare and tastes so good.


Savoury biscuits

 Ingredients:

Refined flour 1 cup
Butter 1/3 cup
 Salt 1 teaspoon
Pepper powder 1 teaspoon
Jeera (cumin) 1/2 teaspoon
Dry mint leaves ,crushed 1 teaspoon( optional)
Milk few teaspoons
Makes 18-20 biscuits

Recipe:

Mix  salt,pepper powder,cumin,dry mint leaves and refined flour. Add butter and mix to resemble fine breadcrumbs. Add few teaspoons of milk to form a  semi soft dough . Wrap it in a cling film.Refrigerate for 2 hours. Take it out of the refrigerator and remove the cling film. Roll it over a greased surface until 1/2  inch thick. Cut into squares.  Arrange these biscuits in a baking tray. Bake it in a pre heated oven for 8-10 minutes. The biscuits will be soft when taken out of the oven. Once cool, they will be crisp.

Note: Allow the dough to be in the refrigerator for at least 2 hours.As the butter in the dough hardens while in refrigerator, rolling process will be easy.

P.s:- The biscuits should be cooled completely  before consuming,else they will be soft and may not taste well.

Raw mango jam(murramba)


Intro:-

This delicious home made mango jam has only two ingredients. Very easy to cook and can be served with chapatis,bread,dosa.



Raw mango jam

Ingredients:-

Raw mango ( preferably totapuri or malgoba)  grated 2 cups
Sugar 2 cups

 Recipe :-

Wash the mangoes and peel of the skin. Grate the mangoes. Add sugar and mix well. Transfer this mixture into a thick bottomed vessel and cook on a medium flame. Sugar will get dissolved completely . Now the mixture will be watery. Switch the flame to sim and cook till the mixture is sticky and starts leaving the pan. Cool the jam completely before storing it in and airtight bottle.Can be preserved for atleast two months.

Note:

If the mangoes are not sour add 1/2 teaspoon of citric acid for every cup of grated raw mango. Add it before you start the cooking process.
For the extra colour you can add lemon orange colour . Mango essence can also be added to get extra flavour. Add colour or essence after you stop cooking.

Vanilla cupcakes with butter frosting





Vanilla cupcakes with chocolate butter frosting

Ingredients:-


Maida 1 and 1/4 cup
Baking powder 1 tbsp
Baking soda1/2 tsp
Butter 120 gms
Sugar 3 tbsp
Condensed milk 1/2 cup
Lemon juice 1 tsp
Vanilla essence 1 tsp
Salt a pinch


Recipe:-

Sieve maida,baking powder ,baking soda and salt. Cream sugar,butter and condensed milk. Add essence and lemon juice. Now add the sieved mixture 1 tbsp at a time till all the flour is incorporated. If you feel the mixture dry you can add some milk. This mixture should form folds while dropping it into the bowl. Grease the moulds and place a paper cup. Pour the batter into the prepared cup. The cup should be only 3/4 full. If using silicon moulds no need to grease. Bake these cakes in the preheated oven for 12-15 minutes at 180 c. Cool on a wire rack. 

Butter frosting

Unsalted butter 1 cup
Icing sugar 2 cup
Dark chocolate bar 100gms.
Cakes decorations as you like
Melt the chocolate over a double boiler. Take butter ,icing sugar and chocolate in a big bowl. Using a hand blender mix these ingredients for 3-4 minutes.take this mixture into a piping bag with star nozzle. Pipe this frosting over the cooled cakes and decorate with colour coated sugar balls.


note:- The quantity of the ingredients mentioned above will yield  10 muffins. To  prepare the cake all the ingredients should be at room temperature. Frosting should be done only after the  muffins are cool.

Mango Pannacotta



 Come summer season and the market is full of mangoes. Now this is a very simple recipe and kids will enjoy it in the warm afternoon.




Mango  Pannacotta Ingredients


Milk 1 cup
Cream 1/2 cup
Sugar 3 tbsp
Gelatin 2 tsp
Mango  pulp 1 cup
Mango diced 1/2 cup
Water1/4 cup

Recipe:- 

Mix gelatin in cold water and stand to soften.heat  milk, cream and sugar. Whisk it well. When cream begins to boil,remove from fire and add the softened gelatine. Beat well till all the gelatine is dissolved. If you find any lumps,then sieve this mixture .Mix mango puree . You can also add  a teaspoon essence  and color to enhance the flavour. I preferred to keep it natural.  Add mango dices.Pour into individual bowls and set in fridge for two hours. Serve chilled.

Kadhai paneer


Intro:-

This famous dhaba recipe is very easy to cook and is delicious. As the ingredients are easily available in the kitchen ,this recipe wont take much time. Serve it with phulkas( rotis) or naan .





Kadhai Paneer

Kadhai Paneer  Ingredients:-


Paneer 200 gms
Capsicum-100 gms
Ripe tomatoes big-4
Garlic-5 to 6 pods crushed
Ginger-1 1/2 inch cut into julienne
Green chilles 3 slit lengthwise
Red chilli powder-1 tsp
Coriander powder 1 tbsp
Kasuri methi- 1 tsp
Coriander leaves-1 tbsp
Turmeric powder-1/2tsp
Ghee- 1 tbsp
Salt to taste



Recipe:-


Cut paneer into cubes. Cut capsicum into paneer size cubes. Chop tomatoes. Melt ghee and add crushed garlic. Fry for a minute. Add turmeric.  Add tomatoes and cook till the tomatoes are soft ,mushy and till the oil seperates. Now add ginger and green chilles . Fry for a minute. Add red chilli powder and coriander powder ,salt and mix. Now add capsicum and cook for two minutes. Capsicum should be crunchy and not cooked. Add paneer cubes and mix properly.  Cook for a minute.Add kasuri methi and mix well. Remove into a serving bowl and garnish with coriander leaves.
