Raw mango jam(murramba)


Intro:-

This delicious home made mango jam has only two ingredients. Very easy to cook and can be served with chapatis,bread,dosa.



Raw mango jam

Ingredients:-

Raw mango ( preferably totapuri or malgoba)  grated 2 cups
Sugar 2 cups

 Recipe :-

Wash the mangoes and peel of the skin. Grate the mangoes. Add sugar and mix well. Transfer this mixture into a thick bottomed vessel and cook on a medium flame. Sugar will get dissolved completely . Now the mixture will be watery. Switch the flame to sim and cook till the mixture is sticky and starts leaving the pan. Cool the jam completely before storing it in and airtight bottle.Can be preserved for atleast two months.

Note:

If the mangoes are not sour add 1/2 teaspoon of citric acid for every cup of grated raw mango. Add it before you start the cooking process.
For the extra colour you can add lemon orange colour . Mango essence can also be added to get extra flavour. Add colour or essence after you stop cooking.

Vanilla cupcakes with butter frosting





Vanilla cupcakes with chocolate butter frosting

Ingredients:-


Maida 1 and 1/4 cup
Baking powder 1 tbsp
Baking soda1/2 tsp
Butter 120 gms
Sugar 3 tbsp
Condensed milk 1/2 cup
Lemon juice 1 tsp
Vanilla essence 1 tsp
Salt a pinch


Recipe:-

Sieve maida,baking powder ,baking soda and salt. Cream sugar,butter and condensed milk. Add essence and lemon juice. Now add the sieved mixture 1 tbsp at a time till all the flour is incorporated. If you feel the mixture dry you can add some milk. This mixture should form folds while dropping it into the bowl. Grease the moulds and place a paper cup. Pour the batter into the prepared cup. The cup should be only 3/4 full. If using silicon moulds no need to grease. Bake these cakes in the preheated oven for 12-15 minutes at 180 c. Cool on a wire rack. 

Butter frosting

Unsalted butter 1 cup
Icing sugar 2 cup
Dark chocolate bar 100gms.
Cakes decorations as you like
Melt the chocolate over a double boiler. Take butter ,icing sugar and chocolate in a big bowl. Using a hand blender mix these ingredients for 3-4 minutes.take this mixture into a piping bag with star nozzle. Pipe this frosting over the cooled cakes and decorate with colour coated sugar balls.


note:- The quantity of the ingredients mentioned above will yield  10 muffins. To  prepare the cake all the ingredients should be at room temperature. Frosting should be done only after the  muffins are cool.

Mango Pannacotta



 Come summer season and the market is full of mangoes. Now this is a very simple recipe and kids will enjoy it in the warm afternoon.




Mango  Pannacotta Ingredients


Milk 1 cup
Cream 1/2 cup
Sugar 3 tbsp
Gelatin 2 tsp
Mango  pulp 1 cup
Mango diced 1/2 cup
Water1/4 cup

Recipe:- 

Mix gelatin in cold water and stand to soften.heat  milk, cream and sugar. Whisk it well. When cream begins to boil,remove from fire and add the softened gelatine. Beat well till all the gelatine is dissolved. If you find any lumps,then sieve this mixture .Mix mango puree . You can also add  a teaspoon essence  and color to enhance the flavour. I preferred to keep it natural.  Add mango dices.Pour into individual bowls and set in fridge for two hours. Serve chilled.

Kadhai paneer


Intro:-

This famous dhaba recipe is very easy to cook and is delicious. As the ingredients are easily available in the kitchen ,this recipe wont take much time. Serve it with phulkas( rotis) or naan .





Kadhai Paneer

Kadhai Paneer  Ingredients:-


Paneer 200 gms
Capsicum-100 gms
Ripe tomatoes big-4
Garlic-5 to 6 pods crushed
Ginger-1 1/2 inch cut into julienne
Green chilles 3 slit lengthwise
Red chilli powder-1 tsp
Coriander powder 1 tbsp
Kasuri methi- 1 tsp
Coriander leaves-1 tbsp
Turmeric powder-1/2tsp
Ghee- 1 tbsp
Salt to taste



Recipe:-


Cut paneer into cubes. Cut capsicum into paneer size cubes. Chop tomatoes. Melt ghee and add crushed garlic. Fry for a minute. Add turmeric.  Add tomatoes and cook till the tomatoes are soft ,mushy and till the oil seperates. Now add ginger and green chilles . Fry for a minute. Add red chilli powder and coriander powder ,salt and mix. Now add capsicum and cook for two minutes. Capsicum should be crunchy and not cooked. Add paneer cubes and mix properly.  Cook for a minute.Add kasuri methi and mix well. Remove into a serving bowl and garnish with coriander leaves.

Masala tea powder/Chai masala


Intro:-

As I woke on a lazy sunday morning,I saw the balcony of my bedroom totally wet. Yes,it had rained the whole night .I could smell the first monsoon shower and then aroused an intense desire to have a cup of hot piping masala tea.Quickly, I searched for the necessary ingredients,add here they are...

Masala tea powder Ingredients:-


Dry ginger powder-50gms
Green cardamom pods- 25 to 30
Cloves-15
Cinnamon-4 sticks(2 inches each)
Nutmeg powder-1 tsp
Pepper-2 tsp
Dry lemon grass leaves-1 1/2 tbsp

Recipe:-

 Dry roast cardamom ,cloves,pepper and cinnamon  in a shallow pan on medium heat for 2 minutes. Grind it into a fine powder along with dry ginger powder,nutmeg powder and dry lemon grass. Store in an airtight container.



Preparing masala tea/masala chai

Ingredients:-

Milk-1cup 
Tea powder(can use either-leaf or powder but not the green tea)-1 tsp and a pinch more if you want a stronger flavour
Sugar-according to taste( I prefer 1 tsp)
Masala tea powder -1/4 tsp
Note: If using full cream milk ,I suggest to  take half cup milk and half cup water,else the tea will taste more of milk rather than tea.
Preparation: Add all ingredients except sugar into a teapot and bring it to boil. Boil for 2 minutes. Strain it into a cup. Add sugar and serve hot .
